“One of many satisfactions I had when I work is sharing knowledge, the value I attached the most.
I do so with great enthusiasm because it requires a permanent challenge to promote new ideas and share them to the greatest number. When I was young, I was in les Compagnons du Devoir, a great school where my peers passed on their knowledge.
It’s my turn to teach all the knowledge I’ve learned in my career. My keen interest in pastry, my passion for ice cream and crafts and my desire to convey the love of work led me to found this school. It actually reflects my vision of the profession: efficiency, demanding but quality and eagerness.”
